Dill Pickle Grilled Cheese (Skillet or Flat-Top)

This dill pickle grilled cheese costs about $1.03 to make at home, roughly a tenth of the $10+ café version, and it tastes better. Four ingredients do the work: sharp cheddar, dill pickle, a thin smear of Dijon, and flaky salt on top. The base is an enriched, slightly sweet white loaf that toasts crisp and melts into the cheese instead of crumbling. We use our own Eigenstate white loaf.


Ingredients

  • 8 slices Eigenstate bread
  • 200g (7 oz) cheddar, sliced (50g per sandwich), like Tillamook
  • 57g (½ stick / 4 tbsp) unsalted butter, softened
  • Dill pickles, thinly sliced (about 4 to 5 slices per sandwich)
  • Dijon mustard, thin smear
  • Flaky salt, to finish

Build the Sandwiches

  1. Lay out 8 slices. Spread softened unsalted butter on the outside face of every slice, the side that meets the pan. Butter the bread, not the pan. You get even coverage and more control over the browning.
  2. Flip 4 slices butter-side down. On the dry side of each, spread a thin smear of Dijon.
  3. Pat the pickle slices dry, then layer 50g cheddar and the pickles on each. Cap with the remaining slices, butter-side up.

The butter is unsalted on purpose. The flaky salt goes on top, so the salt hits the crust before it hits the cheese.


Cook

  1. Heat a flat-top or heavy skillet to medium-low, about 300 to 325°F (150 to 163°C). Any hotter and the outside burns before the cheese melts.
  2. Cook 3 to 4 minutes until the bottom is deep golden, not pale. Press lightly with a spatula. Don't smash it; you want some loft.
  3. Flip and cover with a lid for the second side. The trapped heat melts the cheese through without scorching the crust. Sprinkle a pinch of flaky salt on the toasted top.
  4. Cook another 3 to 4 minutes to deep golden with a full melt. Rest 1 to 2 minutes, then cut on the diagonal.
  5. Feeding a crowd? Hold finished sandwiches in a 200°F (93°C) oven on a wire rack, not a sheet pan, or the bottoms steam soft. Good for up to 15 minutes.
