The Glaze:

  • 30g white miso (2 tablespoons)
  • 40g butter (3 tablespoons)
  • 25g honey (1.25 tablespoons)
  • 10g brown sugar (2 teaspoons)
  • 5g lime juice (1 teaspoon)
  • NO PEPPER (kid-friendly version)

The Pineapple:

  • 1020g pre-cut pineapple chunks (36 oz)

Instructions

At Home Before Leaving:

1. Make the glaze (5 minutes):

  • Microwave 40g butter for 45-60 seconds until HOT
  • Add 30g white miso to hot butter, whisk until completely smooth
  • Add 25g honey, 10g brown sugar, 5g lime juice
  • Whisk 30 seconds until fully combined
  • If lumpy: microwave 20 more seconds, whisk again
  • Should look like smooth caramel sauce

2. Prep the pineapple:

  • Drain 1020g pineapple chunks, pat dry with paper towels
  • Place chunks in large container with lid
  • Pour HALF the glaze (about 55g) over pineapple
  • Reserve other half (about 55g) in jar for later
  • Toss/shake to coat evenly
  • Seal both containers

At the Grill (350°F)

Grilling Process (10-12 minutes):

  1. Preheat grill basket on TOP RACK for 2 minutes
  2. Add glazed pineapple chunks to hot basket
  3. Grill 3-4 minutes, shake basket vigorously
  4. Grill 3-4 minutes, shake again
  5. Grill 3-4 minutes until golden brown with caramelized edges
  6. Transfer to serving platter
  7. Drizzle remaining 55g glaze over hot pineapple
  8. Serve immediately
